Dakar has entire streets of grill stalls dedicated to nothing but this one dish, busiest well after dark.
Chunks of lamb or mutton marinated and grilled over hot coals until charred outside and juicy inside, chopped up and served with a sharp onion-and-mustard sauce. It's the specialty of dedicated grill stalls known as dibiterie, which come alive at night across Dakar.
Why it's made this way: Grilling over open charcoal at dedicated night stalls turned dibi into a social ritual as much as a meal, shared the way others might meet at a bar.
