It's essentially a way to use up whatever came off the grill the night before — leftover pork, beef, and ćevapi get chopped and stewed down with peppers into something entirely new.

Grilled meat scraps are diced and simmered with onions, hot and sweet peppers, and tomato into a thick, fiery mix, then served bubbling in a small clay dish with bread. It's a fixture at Leskovac's grill houses and roadside roštiljnice.

Why it's made this way: Southern Serbia's cuisine leans notably spicier than the rest of the country, a taste shaped by trade routes south toward Macedonia and older Ottoman-era foodways.
