It's the only sausage in the world with its own government-mandated meat quota.

A coarse, spiced sausage — beef, sometimes mixed with pork or lamb, seasoned with coriander, pepper, and nutmeg — coiled into a spiral and grilled over open coals at a braai. Street vendors slice it into a roll of bread with grilled onions and a squeeze of tomato relish or chutney.

Why it's made this way: South African regulation actually requires boerewors to contain at least 90% meat to legally carry the name, a rule that protects a sausage tied closely to national identity.
