Cava

Cava exists because a Catalan monk visited Champagne in 1872, came home to Sant Sadurní d'Anoia, and tried to replicate what he'd seen — using entirely different local grapes.

Cava is a traditional-method sparkling wine made mostly from local white grapes, produced almost entirely around the Penedès area of Catalonia. It's the everyday celebratory pour across Catalan meals and festivities.

Why it's made this way: Roughly 95% of all cava still comes from Catalonia, with the town of Sant Sadurní d'Anoia serving as its unofficial capital — making it as regionally anchored as Champagne is to its own corner of France.
