Cava exists because a Catalan monk visited Champagne in 1872, came home to Sant Sadurní d'Anoia, and tried to replicate what he'd seen — using entirely different local grapes.
Cava is a traditional-method sparkling wine made mostly from local white grapes, produced almost entirely around the Penedès area of Catalonia. It's the everyday celebratory pour across Catalan meals and festivities.
