Vendors mix it to order from a tray of a dozen or more separate fruits and vegetables, so no two paper cones of achcharu ever taste quite the same.

Chunks of unripe mango, pineapple, papaya, ambarella, or guava are tossed with salt, sugar, chili powder, and vinegar into a tangy, fiery pickle, sold from carts stocked with a rainbow of jars and fresh-cut fruit. Vendors scoop a mix into a paper cone or bag, and it's eaten as a walking-around snack rather than a full meal.

Why it's made this way: The dish grew out of home pickling traditions used to preserve Sri Lanka's seasonal fruit glut, and street vendors turned that pantry staple into an on-the-spot snack by pairing raw fruit with chili and salt right at the cart.
