It's a totally different coconut variety from the green ones used for cooking — bright orange, grown specifically for its water, and native to Sri Lanka.
Thambili is the water of the king coconut, a golden-orange variety indigenous to Sri Lanka, hacked open with a machete and drunk straight through a hole cut in the top. Vendors stack them by the roadside, at beaches, and outside temples, chilling them for a quick sale.
Why it's made this way: Considered purer and more naturally hydrating than other coconut water, it's been a trusted everyday tonic in Sri Lanka for centuries, prized in Ayurvedic tradition.
