Cholera

Despite the alarming name, it has nothing to do with making anyone sick — one story says it was invented during an 1830s cholera outbreak, when people stuck at home baked with whatever was in the cellar.

A pie crust is layered with potato, leek or onion, apple or pear, and cheese, then baked until golden. Goms valley bakeries and market stalls sell it by the slice, a filling snack built from long-storing root cellar ingredients.

Why it's made this way: Multiple origin stories circulate — a cholera-era pantry dish, or a word tied to the coal ('Chola') used to bake it — but either way it became a defining specialty of the upper Valais.
