Urojo is a tangy, turmeric-yellow soup made from potatoes, spices, and tamarind or citrus, ladled over crunchy toppings like bajia (lentil fritters) and kachori (spiced potato balls), then finished with chutneys. It's a signature evening street food in Zanzibar's Stone Town, especially around Forodhani Gardens.

Why it's made this way: Zanzibar's long history as an Indian Ocean trading hub shows up directly in the bowl — the turmeric and tamarind reflect Arab and South Asian spice-trade influence, while the fried toppings echo the island's significant Indian-origin community.
