Vendors ringing the Queen's Park Savannah simmer the soup in huge cauldrons on carts that have parked in the same spots for generations, some family stalls tracing back decades.
Whole corn cobs and split peas are simmered for hours in a coconut milk broth with dumplings and ground provisions, ladled into cups by vendors circling the Savannah, especially after dark.
Why it's made this way: The Savannah's ring of food carts is Port of Spain's most famous open-air street food gathering, and corn soup is the dish locals most associate with a night out there.
