Grilled mackerel served in fresh bread with onion, lettuce, and a squeeze of lemon, traditionally sold from boats rocking at the Galata Bridge in Istanbul.

Why it's made this way: Fishing boats doubling as kitchens meant the catch went from water to sandwich within the hour — about as direct a supply chain as street food gets.
