Ordering muchomo in Uganda is as much a social ritual as a meal — whole evenings are built around the grill.

Muchomo is skewered goat or beef, seasoned simply and grilled slowly over charcoal until smoky and tender. It's sold by roadside vendors and at casual open-air 'muchomo joints' with benches, often alongside a cold drink.

Why it's made this way: Grilling meat over open charcoal is a practical, low-equipment way for vendors to cook to order, and the slow communal pace of eating muchomo with friends after work has made the grill itself a fixture of Ugandan social life.
