Rolex — street food from Uganda

The name has nothing to do with the watch — it's short for 'rolled eggs.'

A rolex is a fried omelette loaded with chopped tomato, onion, and cabbage, then rolled up inside a freshly cooked chapati. Vendors cook it to order on a flat griddle right at the roadside stand and hand it over wrapped in paper, ready to eat with one hand.

Why it's made this way: Chapati arrived in Uganda with Indian laborers brought to build the railway in the late 1800s, and rolling it around a cheap fried egg turned it into a filling, portable meal — so beloved that CNN named it Africa's best street food and Uganda's tourism ministry now promotes it as a bucket-list attraction alongside the mountain gorillas.
