One Preston vendor, the Spud Bros, has sold jacket potatoes from the same converted tram carriage for over 70 years.

A jacket potato is a whole baking potato roasted until the skin turns crisp and the inside goes fluffy, then split open and piled with toppings — classic combos are cheese and beans, tuna mayo, or coleslaw. Market stalls and vans keep them warming in hot cabinets and build each one to order.

Why it's made this way: Baked potatoes were sold hot from street carts in Victorian London as cheap, warming food for factory workers, and the format never went away — it just picked up modern fillings.
