Some of Brick Lane's bagel bakeries have been baking round the clock, seven days a week, since long before 24-hour shops were normal anywhere else in London.
Salt beef is cured and simmered until tender, then piled thick into a fresh boiled-and-baked bagel with mustard and a pickle on the side. Brick Lane's all-night bagel shops have served it from the counter to night owls and market crowds for decades.
Why it's made this way: It's a legacy of the East End's Jewish immigrant community, who brought both bagel-baking and salt-beef curing traditions with them and built an around-the-clock trade to serve the neighbourhood.
