Haggis Supper

Scotland's national dish gets a second life dunked in fish batter and deep-fried right alongside the cod.

A thick slice of haggis is coated in the chippy's standard batter and fried until crisp, then served with chips and a splash of vinegar — no plate required. It sits on the menu board next to battered sausages and black pudding suppers in takeaways across the country.

Why it's made this way: Chip shops adapted the traditional dish of oatmeal, spice and offal into a handheld, fried format so it could be eaten on the same terms as fish and chips — quick, cheap, and on the move.
