The 'wrong' cheese — nacho-style Cheez Whiz — actually outsells provolone at Philadelphia's most famous steak windows.

Thinly shaved ribeye is griddled with chopped onions and piled into a long Amoroso roll, then topped with melted provolone, American cheese, or Cheez Whiz. Walk-up windows in South Philadelphia grill it to order.

Why it's made this way: Hot dog vendors Pat and Harry Olivieri are credited with grilling chopped beef onto a roll for themselves in 1930 — a customer asked for one too, and the sandwich spread from their South Philly cart.
