It was invented by a waiter mixing two half-finished bottles at the same market bar where it's still poured today, well over a century later.

Medio y medio is an equal blend of still white wine and sparkling wine, said to have originated at Roldós, a bar in Montevideo's Mercado del Puerto operating since 1886. It's typically drunk as an aperitif before a parrillada (grilled meat) meal, poured cold in wine glasses at the market's open-air stalls.

Why it's made this way: The drink is inseparable from its birthplace — the historic Mercado del Puerto — and remains one of the clearest examples of a Uruguayan invention still tied to its original bar.
