Instead of bread, the 'bun' on both sides of this sandwich is a thick slab of twice-fried green plantain, flattened and fried a second time until sturdy enough to hold a full stack of meat and cheese without falling apart.

Green plantain is sliced thick, fried, smashed flat, and fried again until crisp-edged, then two of these slabs are packed with shredded meat, cheese, lettuce, and sauces like a sandwich. Maracaibo street stalls build them to order and wrap them in paper to eat with both hands.

Why it's made this way: Maracaibo's street-food scene is widely credited with inventing the plantain-bun sandwich format, and it remains one of the clearest signature dishes tied specifically to Zulia.
