Munkoyo

It's fermented with a wild root, not yeast — the drink gets its fizz and tang from pounded Rhynchosia root instead of any cultivated starter.

Munkoyo is a lightly fizzy, tangy Zambian drink made by fermenting maize meal with the pounded root of a wild Rhynchosia shrub, which supplies the enzymes that convert starch to sugar. It's brewed in gourds or buckets over one to three days, then sold cold from roadside stalls and carried to weddings and family gatherings in reused soda bottles.

Why it's made this way: Long before commercial soft drinks reached rural Zambia, munkoyo was the everyday refresher, and it's still made the same way in villages and Lusaka's markets alike.
