Each dumpling hides a whole apricot, pit removed and often replaced with a sugar cube, wrapped entirely in dough so the fruit stays juicy through boiling.

A whole Wachau apricot is wrapped in potato or curd-cheese dough, boiled until the dough turns tender, then rolled in buttered breadcrumbs and sugar. Market stalls along the Danube's Wachau valley sell them by the piece in summer when the local apricot harvest peaks.

Why it's made this way: The Wachau valley's microclimate is one of Austria's prime apricot-growing regions, and the dumpling became the definitive way to showcase the fruit fresh off the tree.
