Bhapa pitha stalls only appear with the first cold snap — the rice cake is steamed inside a cloth-covered clay pot that doubles as its own tiny sauna.

Bhapa pitha is a steamed rice cake made from finely ground rice flour packed into a small perforated bowl with a filling of grated coconut and molasses (nolen gur) at its center. The filled bowl is set over a pot of boiling water and steamed for a few minutes until it turns into a soft, fragrant cake, then tipped out onto a plate for the customer.

Why it's made this way: Bhapa pitha is tied to Bangladesh's winter harvest season, when fresh rice and date-palm molasses are both in season, and roadside vendors set up steaming pots specifically for the cool months, making it as much a seasonal ritual as a snack.
