Chotpoti

Its name literally means 'spicy-spicy' — a dish so intensely seasoned that Bangladeshis coined a repeating word just to describe it.

White chickpeas and boiled potatoes are simmered in a tangy spiced gravy, then topped with chopped boiled egg, tamarind sauce, raw onion and green chilies. Ladled into small bowls at roadside stalls across Dhaka.

Why it's made this way: Cheap, filling and endlessly customizable at the cart, chotpoti became a fixture of Ramadan iftar spreads and everyday hangouts.
