Chorizo Chuquisaqueño

The sausages are traditionally grilled over a wood fire and served tucked into bread only after being dunked directly into a communal pot of spicy sauce.

Pork sausages seasoned with cumin, garlic and chili are grilled over open coals and stuffed into bread with pickled onion and tomato. Street vendors around Sucre grill them fresh each evening.

Why it's made this way: Chuquisaca's chorizo recipe and grilling style are considered distinct enough to be a point of local pride separate from other Bolivian sausage traditions.
