Pique Macho

Pique Macho — street food from Cochabamba, Bolivia

The dish was reportedly invented in the 1970s by a Cochabamba restaurant owner trying to use up leftover beef and sausage, and it's now one of Bolivia's most iconic street plates.

A mountain of French fries is piled with grilled beef strips, sausage, tomato, onion, boiled egg and locoto peppers. Street stalls in Cochabamba serve it on large shared platters, often for two or more people.

Why it's made this way: Pique macho was created and remains most strongly associated with Cochabamba, Bolivia's self-declared culinary capital.
