Silpancho

Silpancho — street food from Cochabamba, Bolivia

The meat is pounded so thin it's meant to hang over the edges of the rice and potato bed beneath it, a visual signature locals look for when judging a good plate.

Beef is pounded flat, breaded and fried, then laid over a bed of rice and sliced boiled potato, topped with a fried egg, tomato and onion salsa. Cochabamba's street stalls sell it as a filling lunch.

Why it's made this way: Silpancho originated in Cochabamba and remains one of the city's most recognized street and market dishes nationwide.
