The soup usually contains ch'uñu, potatoes freeze-dried over weeks using the Altiplano's extreme nighttime frost and intense daytime sun — a preservation method dating back before the Inca Empire.

A thick soup combines lamb or beef, wheat, chuño, vegetables and herbs like huacatay. La Paz's market stalls keep it simmering all day for a filling lunch.

Why it's made this way: Chairo is tied to La Paz's high Altiplano setting, where chuño-making and hardy grains have long sustained mountain communities.
