Locro Camba

The soup is traditionally topped with sliced avocado, a lowland touch that would be unusual on the plainer highland soups of La Paz or Potosí.

Chicken or beef simmers with rice, plantain and squash into a light, brothy soup, garnished with avocado and cilantro. Santa Cruz market stalls serve it as a mid-morning meal.

Why it's made this way: The dish's rice-and-plantain base and avocado garnish reflect Santa Cruz's tropical lowland pantry, distinct from the potato-and-chuño soups of the Altiplano.
