The dish mixes finely diced beef with thin wheat noodles in the same pot, an unusual pasta-meets-stew combination rarely seen elsewhere in Bolivia.
Finely chopped beef is browned with onion, tomato and chili, then simmered with broken noodles and peas into a thick, saucy stew. Tarija's market cooks serve it over rice with a boiled potato on the side.
Why it's made this way: Saice is considered Tarija's signature dish, shaped by the valley region's blend of Spanish wheat farming and Andean stewing traditions.
