Sofia sits on more than 30 mineral springs, and locals still queue daily with empty bottles at public taps near the old Central Baths to fill up for free, straight from the ground and still warm from underground.
Sofia's mineral water flows warm and faintly mineral-scented from public fountains scattered across the city, most famously the row of taps beside the former Central Mineral Baths. Bulgarians drink it plain, believing in its digestive and therapeutic properties.
Why it's made this way: Sofia was built directly atop thermal mineral springs the Romans and Ottomans both prized for public bathhouses, and the everyday habit of drinking straight from the source has remained a distinctly Sofia custom.
