Medisterpølse

Unlike the boiled hot dog Danes eat from street carts, this coarse-ground sausage is meant to be pan-fried whole and sliced at the table.

Coarsely ground pork is seasoned with allspice and onion, stuffed into a thick natural casing, and pan-fried until browned and juicy. It's a fixture of Jutland's Christmas markets, including Aarhus's large seasonal market, served sliced with red cabbage or mustard.

Why it's made this way: The thick, home-style sausage reflects Jutland's rural butchery tradition, distinct from the thin boiled wieners more associated with Copenhagen's street carts.
