Funen calls itself 'Denmark's garden' for its orchards, and this dish is basically that nickname on a plate — sweet stewed apples piled straight onto salty fried pork.
Thick strips of pork belly are fried until crisp, then topped with apples and onions stewed down with a touch of sugar until soft and jammy. It's classic autumn harvest fare sold at Funen's farm markets and food fairs.
Why it's made this way: Funen's mild climate and dense apple orchards made stewed apples a natural, abundant pairing for the island's pork, and the combination became a signature of the region's harvest season.
