The figs are slow-candied whole, skin and all, in raw cane sugar syrup for so long that they turn nearly black and glossy before serving.

Whole green figs are simmered for hours in cane sugar syrup with cinnamon until deeply candied, then served alongside a slice of fresh white cheese. Cuenca's market stalls sell small cups of it as a dessert.
