Hominy corn simmers for hours with pork rinds, beans and herbs into a thick, savory soup. Cuenca's market vendors serve it steaming hot as a filling breakfast.

Why it's made this way: Mote (hominy) is Cuenca's defining staple grain, so central to Azuay's identity that locals are nicknamed "morlacos" after their mote-based diet.
