Loukaniko

Traditional Attica loukaniko is flavored with orange zest and fennel seed instead of the paprika or chili used in most other European grilling sausages.

Coarse pork sausage seasoned with orange zest, fennel and dried herbs is grilled over charcoal until the casing snaps, then sliced onto a plate or into bread. A regular sight at Athens' meat-market grill stalls and taverna courtyards.

Why it's made this way: The citrus-and-fennel seasoning reflects the herbs and orange groves that have long grown around Attica, giving the region's sausage a brighter, more aromatic profile than smokier styles found further north.
