There's no single Athens version — the same bakery might sell a dozen different tyropita styles, from flaky filo triangles to thick, custardy 'peasant-style' slabs.

Layers of crisp filo pastry are packed with a mix of feta and other Greek cheeses, sometimes with egg, then baked until golden and flaky. Sold hot from bakery windows across Athens as a stand-up breakfast or on-the-go snack.

Why it's made this way: Filo pastry has been central to Greek and wider Eastern Mediterranean baking for centuries, and pairing it with the country's abundant sheep's- and goat's-milk cheese made a savory pie cheap and filling enough to become an everyday street breakfast.
