Akasan is a warm, sweet cornmeal drink flavored with star anise, cinnamon, vanilla, and evaporated milk, cooked down to a smooth, pourable, porridge-like consistency. It's a common breakfast-on-the-go across Haiti, sold hot by market vendors in the morning and drunk from a cup rather than eaten with a spoon.
Why it's made this way: As a cheap, filling, portable breakfast, akasan has stayed a daily fixture of Haitian street life even as other food costs have risen.
