Túrógombóc

The dumplings are dropped into boiling water raw, so the moment they float to the surface is the cook's signal that they're done.

Round dumplings of fresh curd cheese and semolina, boiled until they float, then rolled in buttered breadcrumbs and dusted with sugar, sold in cups at Transdanubian markets and lakeside fairs as a sweet snack.

Why it's made this way: It's built around túró, the fresh curd cheese central to Hungarian dairy cooking, turned into an easy, handheld market treat that needs almost no special equipment to make in bulk.
