Gur Cake

It was originally baked from stale, unsold bread that bakeries couldn't bin, which is exactly how it earned its unglamorous nickname, 'gur.'

Old bread is soaked, mixed with spices, dried fruit and sugar, then pressed between two thin layers of pastry and baked into a dense, dark slab before being cut into squares. Dublin bakeries have long sold it cheaply from the counter as an everyday sweet treat.

Why it's made this way: It was a frugal bakery invention for using up bread that would otherwise be wasted, turning a byproduct into an affordable staple for Dublin's inner-city communities.
