The green "noodles" in cendol aren't noodles at all — they're chewy pandan-flavored rice flour jelly, pressed by hand through a sieve or ricer directly into ice water, which is where the dessert's slippery texture (and its name) comes from.
Shaved ice is piled into a cup or bowl, layered with short green pandan-jelly strands, red beans, and sweet corn, then finished with a generous pour of coconut milk and dark, smoky palm sugar syrup (gula melaka). Street vendors hand-shave the ice block to order from carts parked at busy roadsides.
