Vendors still shave the ice by hand from big blocks with a manual plane, and some Panamanian raspaos are finished with a sprinkle of grated cheese, not just syrup.

Raspao is Panama's classic shaved-ice treat: finely shaved ice packed into a cup and drenched in brightly colored fruit syrups, often finished with a drizzle of sweetened condensed milk. Carts appear on street corners, outside schools, and in parks throughout Panama.

Why it's made this way: Hand-shaved ice desserts spread across Central America and the Caribbean as an affordable way to cool down in tropical heat before home refrigeration was common.
