Panamanians drink their national spirit with milk — 'seco con leche' is a standard bar order, mixing this triple-distilled sugarcane liquor with plain cold milk over ice.
Seco Herrerano is a clear, triple-distilled spirit made from 100% sugarcane juice in Panama's Herrera province, produced by the Varela Hermanos family since the early 20th century. It's sold at roadside cantinas and street stalls nationwide, most often mixed with milk or fruit juice rather than sipped straight.
Why it's made this way: Considered Panama's true national drink, seco is tied to the rural sugarcane traditions of the Azuero Peninsula and its annual cane festival in Pesé.
