Poznań locals don't even call potatoes 'ziemniaki' like the rest of Poland — in the city's own dialect they're always 'pyry', and this dish is basically named after the local accent.

Boiled potatoes served alongside gzik, a tangy dip of curd cheese mashed with soured cream, chives, and radish, sold as a simple, filling plate at Poznań's markets and street-food stands.

Why it's made this way: It's a dish built entirely around Wielkopolska's own regional dialect and farmhouse dairy tradition, and it stayed a point of local pride precisely because it never spread much beyond the region.
