Ordering coffee here means learning a mini-language — 'kopi-o', 'kopi-c', 'kopi-siew dai' each specify a different sugar and milk combo, no menu needed.

Kopi is Singapore's traditional coffee, made from beans roasted with sugar and margarine, then brewed through a cloth filter and served with condensed or evaporated milk. It's ordered by shorthand code at kopitiams (coffee shops) and hawker centres, where the 'kopi uncle' mixes it to order.

Why it's made this way: The kopitiam coffee culture and its ordering code are a living piece of Singapore's Hainanese immigrant heritage, still central to daily hawker-centre life.
