Making it is a genuine spectator sport — prata cooks slap and stretch the dough paper-thin in the air before folding it, and Singapore has held competitive prata-tossing contests.
A ball of dough is stretched until nearly translucent, folded into flaky layers, and pan-fried on a hot griddle until crisp and golden outside but soft within. Torn by hand and dipped into curry sauce, sold plain or stuffed at hawker centers open around the clock.
Why it's made this way: It traces to South Indian Muslim immigrants who adapted the paratha tradition to Singapore's hawker culture, where its low cost and any-hour availability made it a late-night and breakfast staple.
