It's rolled up like a jelly roll before frying, so slicing it open reveals a tight spiral of ham inside pork rather than a simple flat cutlet.

Flamenquín wraps a thin slice of pork loin around cured ham, rolls it tight, coats it in breadcrumbs, and deep-fries it until golden, then slices it into rounds. Córdoba's tapas bars and market stalls serve it as a hearty bar snack.

Why it's made this way: It comes out of Córdoba's inland pork-and-ham economy, turning two everyday cuts into a single fried roll built for sharing at the bar.
