The best torreznos are double-cooked, first slow-rendered, then flash-fried, so the fat underneath stays tender while the skin on top shatters like glass.

Torreznos are cubes of cured pork belly, slow-cooked to render the fat, then fried hard until the skin turns brittle and deeply crisp. Bars and market stalls across Castilla y León serve them as a classic tapa with a cold drink.

Why it's made this way: Curing and frying pork belly was a practical way to preserve and use fatty cuts through the region's cold winters, later becoming a prized bar snack.
