Coca de Recapte

It's baked without any cheese at all — the topping is entirely grilled vegetables, and sometimes sausage or sardines, laid straight onto olive-oil-brushed dough.
Coca de recapte is a long, thin flatbread topped with roasted peppers, eggplant, onion, and sometimes anchovies or botifarra sausage, baked until the edges crisp. Catalan market and bakery stalls sell it cut into rectangles.
Why it's made this way: It grew out of Catalonia's escalivada (fire-roasted vegetable) tradition, giving grilled garden vegetables a bread base for easy market eating.
