The famous spell recited over the flaming punch, the Conxuro da Queimada, feels ancient but was actually written by a poet named Mariano Marcos Abalo in the 1960s — the drink is old, the 'magic words' are modern folklore.
Queimada is made by setting Galician orujo (a grape-pomace spirit) alight in a clay pot with sugar, lemon peel, and coffee beans, then stirring the blue flames until they die down into a warm, smoky, faintly sweet drink. It's traditionally served at night in small clay cups while someone recites the conxuro to ward off evil spirits.
