Sudan's version of falafel isn't made from chickpeas at all — it's built on the same fava beans as the country's breakfast staple.

Mashed fava beans are blended with herbs and spices, shaped into patties or balls, and deep-fried until crisp. Street vendors across Khartoum sell tamiya hot, often tucked into bread with salad and sauce.

Why it's made this way: With roots in Nubian cooking in northern Sudan, tamiya turned the same cheap, abundant fava beans used in ful medames into a portable, handheld street snack for busy city streets.
